Rémi Dufaitre makes all his wines by using the classic carbonic style. He uses whole bunches which are carefully sorted to avoid broken grapes while also adding some carbon dioxide gas to protect the grapes at the beginning of fermentation. He avoids foot stomping the grapes unless he sees some volatility starting to creep in. This wine is made from 70-year-old vines and is fermented in a concrete tank. This Brouilly is bursting with flowers, and while the wine is more muscular than his others, it is one of the most finesse-ful and light Brouilly they have ever made.
