100% Listán Negro from two parcels in the Valle de la Orotava: La Habanera and San Antonio. Both sites are composed of old vines. They are blended into the finished wine to create something that is supremely well balanced. The grapes are hand harvested and foot-trodden, and the plots are fermented separately with lots of whole cluster inclusion, creating a similar effect to the carbonic maceration seen in “La Santa de Úrsula”. Extremely fresh, aromatic, light, a touch funky and smoky. :)
