Catherine and her husband Pierre are benchmark producers of Chenin Blanc and Cab Franc in the Loire Valley. These guys were natural before natural was cool and gained organic certifications in the early '90s. This sparkling is all Chenin Blanc from the Vouvray appellation. Made in a traditional/Champagne method. Bone dry in style. Minimal sulfur is used in production.
