An estate with a history to remember, Conestabile della Staffa is run by Danilo Macucci, a wine-whisperer who will be the first to remind you that "he is merely a guest, married to the vines and his wife Alessandra's noble lineage." Dating back to the middle ages, the estate has seen centuries of shifting agriculture and viticulture, but the land remained untouched by chemicals - or "technology" as Danilo calls them.
VivÓ Rosso uses 100% Gamay del Trasimeno (a local version of Grenache) with a unique method of semi-carbonic maceration that Danilo has been working with and researching. It involves covering the fermenter in a simple clay-like paste with partial whole clusters and a brief 2 days on the skins. Aged in fiberglass tanks. No filtering, fining, or temperature control.
