Edouard Lafitte's is known for using carbonic maceration to demonstrate startling finesse and terrior from his position at le bout du monde - "the end of the world." Tam-Tam is made with hand harvested Syrah and fermented whole cluster at low temperature in fiberglass tanks for 3 weeks total. The wine is aged in 7 year old barrels for roughly 11 months. Bottled with minimal sulfur, it is unfined and unfiltered.
