Stéphane Riffault, son to Claude Riffault and the new owner of his estate, is already producing a number of influential wines from the Sancerre region. After converting the vineyards to organic and biodynamic farming practices in 2017, Stéphane's wines communicate the crisp tone of the Kimmeridgian limestone and demonstrate the precision and attention they receive.
Les Chasseignes is hand-harvested from 25 to 50 year old vines and sees a natural yeast fermentation, 50% in stainless steel and 50% in neutral oak barrels. Aged 7-8 months in stainless steel and neutral oak; unfiltered.
