Guímaro, or "rebel" as it translates from Gallego, is headed by Pedro Rodriguez in the Riberira Sacra, a region where viticulture is not for the faint of heart. Pedro's family originally produced small quantities of wine for their own consumption before beginning estate-bottling in the 90s. Over time, Pedro began to incorporate old-fashioned winemaking methods such as wild yeast fermentation, foot treading, stem inclusion, and aging in used barrels to create expressive, age-worthy wines.
The Guímaro Ribeira Sacra Blanco is sourced from various plots in and around Amandi. The Godello grapes are grown on slate, granite, and sand for a fresh and aromatic expression.
